Fredricksburg, VA, the locally famous frozen custard at Carl's.
Wilmington, NC. Portlande Grille, Jerrys, NoFo (for lunch or brunch).
In Wilmington I prefer to stay out on Wrightsville Beach and while not beautiful beds, the location is splendid at Shell Island.
Have fun.

Well, I'd stop at Charleston or Savannah. If you have the budget, I'd stay at the Planters Inn in Charleston -

or the Ballastone Inn in Savannah.

If you REALLY want a unique experience, head on to Amelia Island and take the ferry to Greyfield on Cumberland Island -
http://www.greyfieldinn.com/
The rates are all inclusive and it gives you a chance to stand on a deserted island with miles of beaches and wild horses. The inn or the campground are the only option for overnight guests. I've never stayed at the inn, but it's at the top of my bucket list.
If you don't want to go over to Cumberland, two other nice options at Amelia Island are the Ritz Carlton -

and the Elizabeth Pointe Lodge -

In St Pete, I'd pick the Don Cesar -

Those would be my top picks.

Really big thanks for the chowhound link. Also, Amelia Island and Cumberland Island suggestions. I am getting more excited about the trip now. We want to take a "slow stroll" South, but then will fly back up at the end of the week.

Cumberland Island, Greyfield Inn, is one of the most amazing lodging experiences I have ever had. The food was good, not off the charts.http://www.greyfieldinn.com/
We stayed in a cottage not the main building.
