Thai Food is hard to find on Kauai
I was under the impression that all cuisines are available on Kauai,
since it is a US state.
Well, it's not that easy. There is not a single Indian restaurant to be found, yet.
Thai Food seems to be fodder for a wild goose chase.
Unless you go to Princeville, on Kauai's north shore.
There you will find Princeville Center, a mall that caters to the needs of the small local community.
Everything a modern traveler needs is available there, even Thai Food.
Fastfood franchises are out of the question! You can't even find a Starbucks.
There is, however, a small food court that has ethnic foods available, thank goodness. Princeville Center's Food Court is home to Tamarind Thai Cuisine,
a small "hole-in-the-wall" establishment that is operated by a Thai/American couple that insists on all things fresh.
As the space limitations are severe, one may wonder as to the efficiency of service. Once the order is placed, however, one can anticipate a regalia of authentic Thai dishes served on porcelain by the staff, who scurry about babbling orders at one another with intensity. My meal was served by the owner herself, and I felt as if I were in a Thai enclave.

In addition to Tamarind Thai in Princeville Center, there is a push cart near the old Mango Mama's in Kilauea -- Thai2Go -- open for lunch and early dinner Monday thru Saturday. Mema Thai is on the highway in Wailua for lunch and dinner, and The King and Thai in Kapa`a is one of my favorites...open only for dinner.
We Kaua`i residents have lamented the absence of Indian food for years -- and then two Indian restaurants opened within months of each other. Yay! The first one is on the highway near the multi-street intersection at the north end of Kapa`a -- near Kapa`a Beach Park -- open for lunch and dinner daily. The newest one opened in the shopping center which is home to Foodland in Kapa`a -- dinner only.

Kauai is a county of the state of Hawaii. It was clear to me what the OP was getting at. However, I don't think that being a US state means that all varieties of cuisine are available. Depends on which ethnic groups immigrated there.
