Bachslunch, all pastrami starts out fatty and therefore should be juicy. The extra $1.00 buys you pastrami from which the fat has then been trimmed.

I'm familiar with pastrami sandwiches and have had both extra lean and not on various occasions and at different places, though not specifically at Katz's. Personally, I do not prefer the extra lean as I find it less flavorful and a little drier and sometimes a little tougher in texture. It would also appear I'm not alone in this, but clearly some don't agree.

I just don't like to eat fat. Some do, some don't. That's what makes the world go round. We can't all be the same. :-)
