The Esalen Institute at Big Sur is about as wonderful as it gets. They have short courses in physical-spiritual health and wonderful, mostly vegetarian food. It overlooks the ocean with hugh hot tubs (swimming suit optional) and swimming pools. Beautiful gardens and gounds.

The Sonoma Mission Inn in the wine country is a beautiful hotel and spa. Definitely worth checking out.
