I am going to be in NY easter sunday with students
Was thinking free time rounds Soho area, will shops be open

Depending on when your free time is and how old your students are, I'd actually head to the Highline or the so-called "Easter Parade" on Fifth Avenue (around Rockefeller Center up to 57th).

The High Line would be much more convenient to go to from SOHO.
