Park City is not exactly a short distance from Salt Lake City.
As for what you do with two weeks in Park City is a good question. I have no idea what I would do there this time of year for 2 days, let alone two weeks.

Hi, dlgschultz....as you probably know, Park City is an easy 35 minute drive to Salt Lake, so there's no problem doing things in Salt Lake while you're staying in Park City.
There's lots of things to do this time of year, although your mountain hiking options may be limited by now. However, Snowbird is still open this coming weekend until June 15 for skiing (about 45-50 minutes from Park City.) The Olympic Sports Park in Park City is really interesting. My favorite Park City restaurants are Chez Betty and Chimayo.
For Salt Lake activities, I'd suggest checking out Red Butte Gardens for a walk and picnic, Temple Square if you've never been there including a Mormon Tabernacle Choir rehearsal on a Thursday evening. For Salt Lake restaurants: Takashi for sushi, Fresco for italian garden dining and Acme Burger for cool casual gourmet burgers and fries.

Sounds to me like brookwood has never been to Park City in the summer. Shhhh, we won't tell him/her what they are missing!
As Katy mentioned, we've had a great snow year and a cooler and wetter than normal spring = skiing still at Snowbird (actually not that unusual)!
Summer Park City activities will be starting this next week. The weekly Farmer's Market in the Canyon's parking lot, free summer concerts at Deer Valley (bring your own gourmet picnic and drinks), Silly Sunday (Main St. street fair on Sundays).
As Katy mentioned, the Utah Olympic Park is a must see. Also, live theater at the Egyptian on Main St. Endless restaurants, art galleries, spas. Mountain biking is full tilt on the lower slopes (still snow up higher) and the activities at the base of Park City Mtn Resort should be open by now too. Alpine slides and zip lines, mini golf, horseback riding, fly fishing, hiking, golf, hot air ballooning. What else do you want?

There are enough restaurants to keep you very busy in Park City but if you get down to SLC:
1. Trio (mid-priced Italian with a good wine list)
2. Cafe Martine (tapas)
3. Cafe Molise (Italian)
4. Bambaras (top rated)
5. Cafe Madrid (amazing Spanish food)
6. Em's (by the Capital building)lovely patio
7. Franks (supposed to be incredible)
For lunch:
1. Red Butte Cafe
2. Trio
3. The Dodo
I go back and forth to Park City to ski and people commute every day from Park City to work (takes about 30 minutes) so it is easy to go back and forth. Hiking in Millcreek Canyon is good now. Not sure about the Cottonwood Canyons. The University of Utah has a nice art museum.

So you like Cafe Trio too! It's definitely one of my favorites. Sounds like we have the location for a future Fodorites GTG. A friend tells me they have a great Sunday brunch at their Cottonwood restaurant. Have you tried it?
