Scottsdale/Phoenix-Luxury Quiet Adult Resort

We would like to spend a long weekend at a resort in Scottsdale/Phoenix area. I noticed that a good number of the hotels have numerous programs to attract families with children (camps, water parks, etc.). We want quiet luxury, poolside drinks, good service .
I have called the high end hotels and they all say they welcome couples without children hoping to attract both clients. They even offer some compromised amenities for adults only. Unfortunately that usually doesnt work because there are a good number of parents and children who dont respect those boundaries. Better to go somewhere else.
Suggestions?

We spent a long weekend at Intercontinental Montelucia in February. There is an adults only pool and we saw very few children overall.

We stayed at the Montelucia in June I think. The adults only pool is nice, but the main pool had 1) lots (LOTS) of 20-something "kids" (who were much louder than the 7-year olds, given the amount of alcohol being consumed) and 2) plenty of children. I do believe this was on a Saturday and the pool was open to the public (for a fee). Still, we loved the resort.

Would you be willing to go a little further than Scottsdale? The Boulders may be the place you are searching for.

I think DebitNM is away, but she's recommended the Royal Palms many times on here - says it's one of her favorite places.
