San Antonio and Guacamole Recipe
 
I have had numerous..(like 10) requests for this recipe.

Thought that I would post it on the site. You will be the hit whenever you make this.

This is from a restaurant in San Antonio that makes it tableside.

Southwest Guacamole Dip

Per 1 avocado -keep the avocado chunky

1/4 orange squeezed
1/2 lime squeezed
1/2 t cilantro-chopped
3 Roasted Tomatoes-blackened (under broiler or on gas stove)
1 T red onions-chopped
1 Sereno pepper-blackened and seeds taken out (optional)
1/2 t sea salt or kosher

Peel tomatoes when blackened. Take out seeds from tomatoes and pepper. Add 2 T pepper and tomatoes to ingredients. I blacken them under the broiler. If you have a gas stove you can do it on the top. They need to be really black. Generall under the broiler for 30 minutes

Sometimes I buy the guacamole from Costco (it is really good), then add supplemental avocados, keeping them chunky. This works well, especially since avocados are kind of expensive. Easy on the salt..I always oversalt. I probably would not put in more
than 1 teaspoon.

That's worth going to San Fran for. I love guac but haven't bought avocadoes all year because they have been so high. I have had that guacamole at the restaurant in San Antoino and it is delish. I had had a little too much margarita and accidently spilled mine into the guac bowl. They took it away and replaced it but I think the margarita addition may have started a new favorite request.

Hi tinathetoad, thanks for the receipe, it sounds fabulous. Nothing better then good Guacamole is there? And, maybe a bit of a Margarita in it might be good too, you think?

Wow! That sounds like mighty good guacamole...mmmmmmm

I've never tried it with roasted tomatoes or serranos, or with orange juice before, but it certainly sounds good... I'm from Mexico (now living in NY), and the way guacamole works down there is:

1 Avocado (coarsely mashed)
1/2 of a small onion, chopped
1/2 of a large tomato, chopped
Handful of cilantro, chopped
Salt

I wish avocados were cheaper here... I've paid up to $3 for ONE avocado... it is outrageous!

But, I've also discovered this wonderful thing... Frontera Guacamole salsa... it is a company owned by Rick Bayless, the same guy from Topolobampo in Chicago... You take an avocado, mash it a bit, and mix it with this salsa (slightly spicy, tomatillo based). It is just great... Guacamole for dummies!

the key to this guacamole is to keep it chunky...I just cut it with 2 butter knives..at the end. If you do it in the beginning it gets too mushed by the time you stir in the ingredients.

Better go back and get more...you will want more. I usually make it with 4. Follow the recipe to a tee and you will not be dissapointed.

It sounds as if it might be Boudros (or at least I've had it there made tableside) on the Riverwalk, across the river and a few door down from the Hyatt. Try a prickly pear margarita too! :D

(Serrano). Not as hot as a habanero, but <i>much</i> hotter than a jalapeno! That's <font color="red">HOT</font>

With avocadoes so dear, anyone near a Trader Joe's who has not tried their frozen avocadoes...should do so, pronto! Affordable, ripe and delicious! Esp when you are going to mash them up for guac.

My favorite, quick way of doing guac has always been to cut/stretch the $$ avocado with a couple of dollops of plain yogurt (oh right - yuck! So you say, but just try it!), a good bit of lime juice, salt, and a couple dollops of your favorite salsa. (Other stuff...chili powder, garlic, etc to taste). Very quick. VEry easy. Very good!

Sorry tucker dc...if you are going to have guacamole....make it real...no yogurt...got to have the real stuff.

have not tried their frozen avocados. probably like the Costco guacamole.

I wonder if you can freeze the avacados yourself when you can get them at a good price? Like blueberries? Anyone tired this? Belle.
