Road Trip- MN to NV
We have three days to travel from southern MN to Las Vegas, and would like to take a route that excludes Lincoln, NE but includes the most scenic drives through Wyoming and Colorado. Any suggestions would be appreciated.

Three days make it rough doing scenic drives. To totally avoid Nebraska, head for Rapid City SD for the first night stop. See Mt. Rushmore if you have time. They have a good evening light show there. Next day, head for Glenwood Springs CO via Cheyenne Wyoming. With an early start from Glenwood Springs, you can detour off I70 to Moab and Arches NP. It's 3 hours from GS to Moab and 6.5 hours from Moab to Las Vegas by the fastest route which is not the most scenic. That's 3 days with 9 to 10 hours driving

tomfuller gave you a great route. If you decide to detour to Moab, exit I-70 at Cisco, Utah exit 214 and take Scenic Highway 128 into Moab.
Interstate 70 between Denver to I-15 is not only the most direct route but it also is some of the most scenic Interstate driving you will see. (but there are more scenic routes as tomfuller has pointed out, they just would take a lot longer) Three days and approx 1700+ miles, you're going to be doing a lot of driving to get there on time!
