Road trip from Florida to Texas

Hi !
We are planing our next holiday between dec8 -jan10 , we are both around 30yrs old , no kids and have already been a couple of times in Florida and this time we'll love to visit some new areas.
So I think it'll be better to take a flight from Miami to San Antonio and rent a car there visit around and going back to Florida because even though we both like to drive we don't want to spend so much time on the road but what do you think?
I'm also a little bit worried about the weather, we are okay with cold (but not freezing though) and don't want to see any snow flakes �� (We are living in Switzerland so we already have snow and freezing weather here and don't really want to have the same weather on our holiday)��
Here are the places I think we will visit but I'll love to have your opinion
Bid bend ranch state parks near Lajitas
Garner state park
Texas nelsoney wildlife
San Antonio if there is a nice place to stay and visit near Corpus Christi please let me know
Mobile AL
N.O Louisiana
Fort Walton beach and Pensacola
We love nature wildlife beach walk and shopping ( well me not my boyfriend ��) but we're not crazy about zoo aquarium museum and nightlife
I'll really appreciate any advice I can get

Do you have to fly to Miami? If what you really want is to spend your time in Texas primarily, why not fly to Dallas for example and do a loop trip from there?

Well we don't have to fly to Miami but fly tickets are cheaper to Miami than to Texas but maybe I should check again maybe it'll end up at the same price

I agree. Fly to New Orleans and rent a car when you are ready to leave the city. Drive west to get to San Antonio first and then have a day or two at Corpus Christi along the Gulf of Mexico.
You may decide after Corpus that you don't really need to see Mobile and the Florida beaches.
Anything you save by flying to Miami will be eaten up with a very long rental car drive.
The hotels along the Riverwalk in San Antonio are quite nice.
