Road trip Florida to Arizona
I am going on a road trip with my parents. We are leaving from Gainesville, Fl and want to end around the Painted desert in AZ. We want to take a southern route there and take part of Rt 66 on the way back. Here is my first stab at an itinerary!
Gainesville to Tallahassee ~2hrs
Tallahassee to Baton Rouge ~6hrs
Baton rouge to Austin ~6 hrs
Austin to Roswell ~8hr
Roswell to Flagstaff ~7hrs
I have no clue what there is to do along the way. I don't want to drive more than 10 hours in any day if we can help it. Suggestions on what to do or eat would be GREATLY appreciated!

You can read my report. Our trip was in reverse from yours but nevertheless it may help you in some decisions.

Just so you know: Mapquest says that the quickest route from Gainesville does not go through Roswell.
The route goes through Amarillo. Why not go west of Flagstaff to Seligman and take the old Rt. 66 to see Grand Canyon Caverns.
The old 66 comes back to Kungman. From Kingman you might want to take US 93 to go see Hoover Dam.
Any plan to go see the south rim of the Grand Canyon?

The Texas Hill Country around Fredericksburg is interesting and historical (LBJ connects/sites) as is the town. It's a bit of a detour, but from Roswell go to Ruidoso and then Alamagordo, White Sands Nat. Mon and then to Las Cruses. The drive, for an interstate (25) to Albuquerque is a good one.
Agree with tomfuller above add a stretch of old Route 66 and Grand Canyon if you can.

When are you going? The All Soul's Procession in Tucson the Sunday after Halloween is unforgettable. Otherwise, in the Flagstaff-ish area I recommend Sedona (it's beautiful but best if you like hiking), and further North is Page where Antelope Canyon and Horseshoe Bend are GORGEOUS.
