Have you checked Carmel Valley ranch yet? We loved it. If cost is no barrier, locate the web site for Post Ranch too. There are some really world class places from Big Sur to the Bay.

We loved the Carriage House Inn. Walking distance to shopping/restaurants - wonderful staff and rooms with fireplaces and whirlpool tubs.
Our favorite is The Tickle Pink Motel. I know it sounds funny, but it was wonderful. We had a suite with a 180 deg. view of the ocean. It is located in the Carmel Highlands right next door to the Highlands Hotel.

the highlands inn is great--right next to tickle pink--and clint eastwood has opened a new relatively inexpensive place near the carmel mission

Also remember the beautiful old Victorian B&Bs in Pacific Grove just north of Carmel. Seven Gables, Green Gables, Pacific Grove Inn are a few. Recommend the Old Bath House there for dinner. For a really great hotel but extremely expensive search for Stonepine in Carmel Valley. Built by the Crockers it's famous for beautiful horses and the ambience of a stay in a private mansion.
