Oregon to Utah in November?

Hey. So my wife and I were trying to plan a trip to Zion National Park in Utah for our anniversary this November 12th. We live in Newport, OR, and other than our Redwoods trip last year, this will be our first major sightseeing trip. We were looking at National Parks and Zion really fit perfectly with what we were looking for! We heard that Zion is gorgeous in the fall, but I was wondering if anyone had some tips on roads, conditions, or places to visit? I've got a pretty good car, and can get ahold of chains, but has anyone had any amount of experience with any roads along this route, and if so, please share some insight as to any possible road closures or annual weather schedules. (i.e., snow, sleet, ice,...fog..) We were thinking a route along I-84E through northern Oregon, then across Idaho and down through Nevada might be the safest bet as there are more frequent stops along the way, but if anyone has any other ideas that would be great as well. Also, we are camping at Watchman Campground for a few nights once we arrive, but does anyone have tips on a good place to stay in Boise, or somewhere close to halfway, that we be amazing! Going through Boise is about 105 miles farther than going through Winnemucca, NV. 1100 v. 1205 miles.
It is 19 hours either way.
Drive US 20 to Bend (4 hours) fill the gas tank in Bend.
Continue east on US 20 and then turn south over Steens to get to Winnemucca. (6.5 hours). From Winnemucca, it should be about 8 hours to Zion.
This avoids Provo and SLC. If you really want to go through Boise, continue east on US 20 through Ontario, OR.
I'll be driving this route next Saturday on my way to Idaho Falls and Yellowstone on Sunday.

I'd head South before heading East. November can be snowy.
