The Grand Central Oyster Bar is located in the Grand Central Terminal. I have never been there, but by the looks of their website, it seems like the oysters are shucked in front of you.

Here's the website. You could always call and ask them your question if you do not get a response from other posters.

The best place to eat oysters in New York is Shaffer City Oyster Bar & Grill, on W. 21st Street near Fifth Avenue.

Jay Shaffer, the owner, is a devoted oyster aficionado who will take you on a "tour" much like a fine sommelier.

The last time we were at Blue Ribbon at Sullivan St., we sat the the bar and they were shucking oysters.

Disclaimer: It's one of my prefered "go to" place in NYC.

Aquagrill, 210 Spring Street, Soho is considered one of the best for raw seafood, including oysters.
