New Orleans-want specific item at restaurant

Does anyone know if there are any restaurants in New Orleans that serve fried parsley?

I know this sounds like a crazy question but I was hoping that Meg or John would know.
I have no idea. Sorry.

Julie, I have never heard of fried parsley, but I have heard of fried spinach. I last had fried spinach at a cajun seafood restaurant called Papadeaux's in Dallas. This restuarant is owned by the same family that has Copeland's restaurant on St. Charles Avenue in New Orleans. If fried spinach is what you're looking for, maybe one of the most helpful and informative posters that live in New Orleans can help you. Good luck and cheers!!

The older folks in the Appalachian Mountains used to pour hot bacon grease on native greens (like watercress) and drain them. The resulting dish was called "wilted greens" or "kilt (killed) greens" or "greasy greens." Is this the kind of dish you're craving? I've never seen it in any restaurant.

NO!

It is fresh parsley that is lightly floured then fried in hot oil. It is very crispy almost like a potato chip.

It doesn't taste healthy or like a vegetable, just like a chip or snack food.
