New Orleans trip -vegetarian's dilemma
OMG, I darned near starved to death!!!!!! It was almost (not completely but almost) impossible to eat. I'm not kidding. Every single meal was a chore. Never again!

SAnParis2, I'm in agreement with the implication that the OP may be trolling. NOLA restaurants may not be as vegetarian friendly as those in other parts of the country, but it shouldn't be impossible to eat here this way either. Heck, just ask the waiter if it's possible to prepare a vegetarian-friendly meal and I'd bet the kitchen will oblige. That might of course be tougher to get at a place like Cochon. 
That being said, if I were strictly vegetarian, I'd probably avoid red beans and rice in NOLA, as it's likely to be made with some kind of meat stock or even have bits of meat (sausage perhaps) in it.

Troll or not trying.
My daughter who while not vegan is a very strict vegetarian managed to survive for four years while went to college in New Orleans. There are tons of ethnic places with vegetarian selections. Many of the regular places have vegetarian dishes as well.

If you don't eat fish, I would not be surprised if you aren't right.
I thought about New Orleans vegetable dishes that I know, and most of them have meat or seafood in them: southern style green beans, squash etc have pork; stuffed mirlitons or eggplant would have shrimp or oysters. You could have gumbo z'herbes and fried okra, but it wouldn't be much of a diet!

Are you a vegan?
I would think that its really hard top be in New Orleans and be a Vegan... I'm a pescaterian and I still find it to be a challenge at times! Especially when you don't know if they put chicken stock in the soups or rice. I usually stick to a salad...

Wow, there's a great Ethiopian restaurant in the Quarter, forgot the name but it's all vegetarian. Uptown there is a great Indian restaurant as well. Red beans and rice without the sausage would be something you could get anywhere, gumbo z'herbes is great, and you could get a muffaletta without the meat, just the olive relish which is delicious. And how can you beat beignets and coffee for breakfast?
Oh well, I hope you enjoyed other aspects of the city.

I agree, Gretchen. Better-scale restaurants in ANY city are normally happy to accommodate special dietary needs, and vegetarianism is pretty basic.
There are entire websites devoted to vegetarian (and vegan) eating in NO.
