Newport would be perfect by the sound of what you are looking for. I highly recommend the Castle Hill Inn if you are looking for luxury accomidations. In Newport you'll have great dining, great siteseeing, and if the weather cooperates you could even go to the beach. Norman bird Sanctuary in nearbye Middletown is great for nature walks if you like that too.
