Definitely try the Pepper Mill on the strip for breakfast or late night food. It is close to the Riviera. Lounge is great, and I highly recommend the Maserati Omelette.
If you like Italian, I saw someone mention Batista's Hole in the Wall, which is very good and used to be our favorite until we tried Nora's. It is off the strip on West Flamingo close to the Rio. Wonderful food (try the baked ziti) and very reasonable.
Cafe Baba Ree Ba's at the Fashion Show Mall was mentioned, also very good. They have great sangria if you drink!
For a quick and fabulous lunch try Nordstroms Cafe on the 3rd floor of Nordstroms at the Fashion Show Mall as well.
I know you said no buffets, but if you try just one make it the buffet at the Bellagio, especially for Sunday Brunch. Around 20 dollars per person, you can try a huge variety of foods and they are all spectacular! They even have a sushi "buffet." I don't do buffets generally, but this place is incredible.
I have also heard rave reviews about the steak house at the Circus Circus, but haven't had the nerve to try it yet!

Just got back from Vegas and we enjoyed dinner at the Grand Lux Cafe at the Venetian. We also had dinner at McCormick and Schmick's (they are on www.restaurant.com). Bahama Breeze was also good. Both are off of E. Flamingo.

There is a new Mexican restaurant at South Pointe that wasn't too bad either and decently priced.

We had lunch at Dan Marino's at Hooter's and it was also good.

You didn't say where you were staying. I (and other members of the list) could probably give you a few suggestions for nearby places if you let me/us know.

I think one of the best deals around is the Business Lunch at The Palm (in the Forum Shops). It is available everyday for $19.50
Served with Choice of Soup of the Day or Mixed Green Salad, Cottage fries or Hash Browns, Coffee or Tea.
You have your choice of Fish and Chips, Philly Cheese Steak, Chef`s Pasta of the Day, Chicken Citron, Broiled Salmon Fillet, Fresh Fish of the Day, or Petite Filet Mignon with Sauteed Mushrooms.

It has been mentioned before, but the Grand Lux Cafe at the Venetian is a good option for reasonable prices and a wide variety of options.

If you like seafood, Seablue at MGM Grand is good. The service is top notch and they carry Hendricks Gin which is not something you find very often.

If you like BBQ, I would recommend The Harley Davison Cafe'. We tried them this past December, and they did great ribs.

If you don't mind buffets, the newest one we tried was The Wynn's. We got it comped for signing up for their card and betting a few bucks. Don't know what deal they have now, but we got comped twice for earning 25 points, and then another 25 points in 3 days. Definitely enjoyed both dinner and breakfast there.

I know the Stage Deli was mentioned earlier. They do killer deli sandwiches. If you like Deli, I would recommend the one in NY NY as well. Don't bother with the one in TI, though. We tried it and it was lousy, food and service.

Usually we do buffets, though we occasionally try other places.

Great thread. I would endorse Bouchon (breakfast, brunch or dinner), Spago in the Forum Shops, very reasonable for lunch, Canaletto at the Venetian or its slighly more modest relation Il Fornaio at NYNY for dinner. And Mon Ami Gabi.

Vodka drinker, eh? Must have the blue cheese-stuffed olive vodka martini at Red Square.

We (typically) do the buffet @ breakfast & then kind of splurge on dinner. Mon Ami Gabi (Paris) IS one of my favorite lunch places, particularly if you can be outside. There is also a great little Mexican place in NYNY where you get tons for your $$.

The Wolfgang Puck place in MB is also good, eat at the bar.
