Border Grill at Mandalay is excellent -- more upscale than the usual Mexican place, and a little more contemporary cooking as well as the classics.

The place in the Venetian is a bit more Cal/Mexican but I thought it was fantastic! Best tortilla soup anywhere!

The new "Sevilla" restaurant and entertainment center in the Aladdin Hotel serves Spanish cuisine (including Shrimp Paella). $110 for the dinner show, featuring Charo and her classical guitar.
