Retirement communities and farm to table restaurants/inns

We will be coming to North Carolina in September to look around for a retirement community. Any suggestions for places to visit- we like culture, continuing education, hiking, and horses? We know about Asheville. Any others?
As part of our tour we would like to eat at farm to table restaurants/inns. We know of The Mast Farm Inn in Banner Elk and Zely & Ritz in Raleigh. Can anyone suggest others in the state?

There are wonderful active adult communities in North Carolina! Near Raleigh you'll find Carolina Preserve, a beautiful Del Webb community. It's nicely located in the heart of the Triangle area between Raleigh, Durham and Chapel Hill allowing residents easy access to great culture and top-notch medical and educational institutions.

Well, the Fearington comes to mind near Chapel Hill. there is another lovely place in Chapel Hill, but can't call the name. There is a place in Winston. Charlotte has a number of all kinds, including one in Davidson, just north and in a lovely lovely college town.
Farm to table in charlotte--several. I'll have to look them up.

Here's a google page of farm to table in Charlotte. One of the most interesting is The King's Kitchen, a southern themed restaurant started by a very fine local restauranteur as a "mission" to train homeless people the culinary trade. The food is DEElicious. It is right in the middle of downtown Charlotte, and would couple well with a trip to our new museum row.
