Fairmont is a lovely property.
Being in Wailea, Napili, Kapalua is about an hour drive..scenic but not around the corner.
For restaurants, I would add the Gazebo in Napili for breakfast and the Plantation House at Kapalua.
Hula Grill and Kimo's are always good in Lahaina.
Everyone has given you great advice.
Molokini used to be a great dive/snorkeling spot but the fish are not as plentiful like it used to be..catamaran ride is fun and memorable.
I am one of the few that is not a fan of the road to Hana but everyone needs to do it at least once and make up there mind.
I like the back side around Kapalua.
Also, go to the Hali'imaile General store and see Bev and have a great lunch.

Also in nearby Kihei is Cinnamon Roll Fair (macadamia nut caramel with cream cheese frosting is to die for), and Cafe O'Lei restaurant highly recommended.

We stayed at the Kea Lani when we were in Maui. It was indeed fabulous.

I second the recommendations for lunch at Mama's Fishhouse and Sansai. Don't miss David Paul's Lahaina Grill (awesome food) and for an awesome inexpensive lunch, the fish sandwiches at Pa'ia Fishmarket are SO fresh and tasty.

I personally thought Nick's was just ok. Capische, the restaurant at the Japanese resort across from the Kea Lani was outstanding by comparison. Easily our best dinner on the island.

Our best breakfast was at the Hotel Hana-Maui...their crunchy almond french toast is truly sublime as is the hotel.

we surfed with outrageous surf school in lahaina and they were great. Instructors were very patient and understanding. Also check out lahaina inn. rooms are cheap and is right in the heart of town! Lulus in lahaina was a great choice to eat with a great surfing theme>
