Many restaurants will have an entree or two to choose for vegetarians.

At Pacific O in Lahaina, I had the tofu entree (think it was called the tofu tower or something) and it was very tasty.

Lots of places serve wonderful salads of beets and goat cheese, too...one of my fave things to eat on Maui.

If you do make it over to Paia, consider a stop in at Cafe Mambo - I ate lunch there and it was pretty good (and several veggie options).

Now I know this will sound kooky but Swiss Cafe tucked back off Front Street with a tiny patio out front had an amazing veggie sandwich.

I love having breakfast on the veranda at Pioneer Inn also right in Lahanai (mac nut pancakes, coconut syrup, fresh mango halves, eggs, white rice).
