Maine Coast - Boating options?

Hi all. We’ve finally got our Maine Coast itinerary decided and made accommodation reservations. So now for the fun part… At some point in our trip would like to take a Sea Kayaking and/or a 2 hr. Windjammer tour. Can you recommend where the best place for this is and who we should use for the tour?
Here is our itinerary:
Sep 6, Thursday – Arrive Boston Airport 2:00 p.m. drive to Portsmouth
Friday – drive to Portland (coastal route)
Saturday – to Bar Harbor via fast route, should arrive around noon (I-95)
Sunday – Acadia National Park
Monday – to Lincolnville
Tuesday – to Boothbay Harbor
Wednesday – Back to Boston for flight home

We enjoyed the Surprise in Camden. YOu could do it while you are in Lincolnville, unless you are just there to take the ferry.

We've used Coastal Kayaking Tours n Bar Harbor. The scenery can't be beat!

Is there an area that fits with our itinerary that is more scenic and better viewed from the water than others. For instance, would kayaking experience be better at Bar Harbor, Camden, Boothbay, etc...? Same for Windjammer / Sailboat.
