Las vegas to Kingston, NY - 7/8 days- June 4th

My 26 year old son has asked me to accompany him and his dog as they drive one-way Los Angeles to NY starting June 4 2016.
He drove NY to LA 3 years ago on the southern route, and wants to return on a different route.. Since I have never driven cross country, my only true request is to see Mt. Rushmore. He would like to go to Colorado, Chicago, and Cleveland. We will be sharing the driving- plan is not to drive more than 6 hours each day, starting out early in the morning- No night driving.

Tentative route- leaving immediately after moving truck leaves- we may be tired so:

Los Angeles Las Vegas- overnight
Las Vegas to Moab- full day and overnight
Moab to Grand Junction (short trip, but some interesting sights)- maybe overnight
Either Boulder or Colorado Springs-overnight

Now this tis the part that I am still working on:
May I have some suggestions for 2 active adults and a 60 lb pooch?

Mt. Rushmore area- I have heard this is just a short visit. View a few sites with no more than 6 hours of visiting time (some even say miss it), so this would not necessarily be an overnight especially since Mt Rushmore to Chicago is a 13 hour drive. Any suggestions of interesting things to break up this 13 hour trip, with a potential overnight stay?

Chicago to Cleveland
Cleveland to Kingston as the last leg home (if tired we can stop somewhere in Pennsylvania) 7 hours or so and then home for me and to Brooklyn grad school prep for him.

Thanks so much for your feedback.

Is Grand Junction worth the time or should I drive a little further between Moab and either Denver, Boulder or Colrado springs?

Glenwood Springs is better than Grand Junction IMO.
See if you can get a swim in the hot spring fed pool.
