Mob Museum in downtown (not the strip)
I am not a fan of Red Rock - time to drive, etc. v reward
At the Venetian (my favorite), take a gondola ride on their canal while an opera singer serenades you. They have replicated Marks Square (of Venice, Italy) to scale, but smaller.
Bellagio fountains referenced above. Do it at night when lights illuminate the water jets that are synchronized to music.

I was in Vegas for a girls trip in April for four days, and we did drive to the Grand Canyon for one day. We had four hours at the park. I would prefer to spend a night near the Grand Canyon in order to see as much of it as possible. Four hours really isn't enough time if this is your first trip to the Grand Canyon.
Red Rocks Canyon is fun, and if you enjoy the outdoors and hiking, I don't think you will be disappointed.
