The most comfortable way is to get two rooms at Mandalay Bay or one of the other hotels at the south end of the strip. If you want to crowd into two queen beds, then you can get a two-bed room at a major hotel. Most of them have such rooms. Why make things hard? What's the problem?

If you all want to stay together and money is not an object as you indicated, I would look at the two bedroom Skyloft suites at the Skyloft at the top of MGM Grand.
If money is no object, you have lots of great options.

If money is really no option, then the best choice is the Four Seasons, which is part of the Mandalay Bay complex, offering luxury hotel amenities closer to the convention. But the MGM Grand is nearby, and you can visit the new, extravagant Hakkasan.

"Money no option" is relative In vegas you can spend a fortune. So if money is no problem - get a suite at any hotel that strikes your fancy and get a driver to ferry you back and forth.
But if you are mere mortals and money is a slight option - get either a two-Queen room or two King rooms at the Mandalay Bay and be upstairs from the convention floor.

This, or maybe a suite at one of the top hotels.
In reality, where money is no object does not really mean spending thousands of dollars per night for a hotel room, I would say that two rooms at the Mandalay Bay would be a decent choice. Nice hotel and has started to price out at the lower end of the class as the center of action has moved north on the Strip. Luxor would be an even lower priced option that is still nearby and still decent enough per the reviews.
The Four Seasons is in Mandalay Bay and would also be a good choice and can be cheapish for what you get (as low as $200 or so per night).
For a luxury hotel, though, I really liked the Mandarin Oriental, which is usually competitive with the 4S. Were it not for having the convention in the Mandalay Bay, I would always choose the MO over the 4S because the location is so superior, especially given the very good dining options at Aria, the Cosmopolitan, and Bellagio, all of which are easily accessible without a cab ride.
Among the casino hotels, either the Wynn or the Encore seem to get the best reviews - we stayed at the Encore and thought it very good, though not luxury in the same way the MO is luxury (e.g. you still waited in lines for things, the lobby is in the casino, service not as unobtrusive (though friendly and good), bathrooms are inferior, toiletries are inferior, etc.). The size is also both a positive and a negative to the casino hotels.

theHOtel, connected to Mandalay Bay by walkway, is quieter with little living-room suites connected to the bedrooms. If there's a convention at MB however, all the MB hotels might be full....so your closest offsite are Luxor, Tropicana, MGM, NYNY, Monte Carlo, Paris, Bellagio, Planet Hollywood....you probably don't want to stay any further away than these.

Just a quick clarification: you are missing CityCenter (Aria, Vdara, Mandarin Oriental) and the Cosmopolitan from that list, which are all marginally closer than the Bellagio or Paris. All would be good options and, for me, all save Vdara would rank higher than those you mentioned (not a Bellagio fan).
Not necessarily recommendable, but you also left Excalibur off the list. I can't stress enough how low this rates on my list of hotels to stay at, but it is super, super cheap, and on the tram to Mandalay Bay. If they are giving away rooms for $29, which I have seen, you could do worse.
