We went to the buffet at the Hilton and it was very nice.

The buffet at the Aladdin has all you mention. I am not a fan of buffets, but all the big hotels have buffets that cater to all sorts of diet options so I think you are pretty safe going to any of them.

I am not a fan of buffets, but I thought the one at Paris was outstanding. Many many choices especially if you are a vegan, I am not but do prefer veges vs meat. My husband thought he had died and gone to heaven.

The strip is huge so let us know if you're staying north strip, center or south. You won't have a problem, really, the choices are huge and menus are posted outside most restaurants. For Italian check out IlFornaio.com, they have a location south strip and they own Canaletto at the Venetian north strip.

For Mexican, I really enjoy Border Grill in the Mandalay Bay.

Buffets:
The best (I hear) is the Bellagio. All I know is that the line out the door is very long.
The seafood buffet at the Rio is supposed to be the best in Vegas..again, I have no experience other than seeing the very long lines.

"Nice" Restaurants:
Rio-
Buzios seafood

Ceasars-
Wolfgang Pucks Spago
or in the Chinese food catagory-Wolfgang Pucks Chinoise

Venetian-
Pinot Brasserie and the Grand Lux and Tao Asian Bistro

Bellagio-
Olives, Circo and Noodles

Paris-
Mon Ami Gabi & Le Provencal

My mind has now gone blank but this should get you started :)

The buffet at TI and Mirage (they're both basically the same) is pretty good. Bellagio is good too and used to be one of our favorites, but we like the Wynn now. It's true, if you're going to be there on the weekend, the Bellagio (as well as the Wynn) line can be long, unless you go early.

There aren't any truly authentic Chinese places unless you go to Chinatown. But the places mentioned above aren't bad.
