Do a search. This topic has been discussed ad nauseum.

I like the Mirage at breakfast (between $8.50-$10 pp). It's just as good as Bellagio and much cheaper.

Caeasar's Palatium has quite a good lunch/brunch buffet, about $13.

Dinner - so many choices. Bellagio is excellent, but more than most (about $24); The Rio's Village Seafood buffet is also a good one, and is about the same price as Bellagio's.
For something a little different, the buffet at Paris has much more international fare than the others, and is around $20-$22.

Caesars Palatium is closed. Cafe Lago sometimes offers a buffet but it's not huge, I'd rather order off the menu there.

My favorite is Bellagio but it is around $34 on Fri/Sat, a little cheaper on weekdays.
