Looking st the historical data for that kiawah, the avarage high tends to be mid 60's at that time of year. We usually go down over the Christmas break (almost a month later) and have had weather ranging from shorts and a tshirt to a coat. Most likely it will be much nicer than NYC however. We usually do a lot outside. Kiawah is home to quite a few birds in the winter that we don't normally get to see. The variety of ducks is amazing. We have gone crabbing in December with more success than in the summer because the crabs are active until the water drops below 55, but the alligators aren't! There are still kayak and nature excurstions planned for that weekend.
The Sanctuary calendar lists holiday events already going on, including fireside s'mores on the lawn. The tree lighting is November 25 and there is usually a special display in the lobby...maybe gingerbread houses, etc.
I second the Fat Hen, but also Wild Olive. See my earlier trip report/review...it was amazing.
