Key West sites
 

Have from Saturday afternoon to Tuesday late morning in a couple of weeks. Want to do more outdoorsy things because of Covid although am fully vaccinated. But also trying to figure out which about 3-5 sites to visit. Some seem expensive.

definitely thinking Hemingway Museum and Fort Zach. Likely also Lighthouse and Audubon House.

what about custom house or butterfly?

I used to live in KW and still visit with relatives a few times a year. The Hemingway House is great, though they have limited the admission, so try and book your time in advance. Fort Zachary Taylor is interesting to explore, and the park itself has a nice beach with a concession stand. I don't know if you've been to KW before, but it's not known for very nice beaches, Zachary Taylor and Smathers are the biggest and most popular. Audubon house is interesting, and you could probably do both that and Hemingway in the same afternoon. I've never been to the butterfly house as it's usually packed with cruise ship passengers (this isn't a problem now though). If you wanted to splurge, you can take the daily prop plane flight out to Fort Jefferson in the dry tortugas. It's very unique, but as you said a bit expensive.
Kayaking is nice, and you can rent and embark right from Hurricane hole on Stock Island (right over the bridge connecting KW). Lazy dog charters will have everything you need and you can go guided or self. You should try and see the sunset celebration on Mallory square one night. We were just there last month and the crowds are a fraction of what they usually are, albeit there was a decent amount of people there.
Charter fishing boats are still operating, but they are pretty pricey in KW.

If you re interested in history, consider visiting Truman's "Little White House" museum. We really enjoyed it.

Truman White house for sure. There is a book store in Key West that has an art gallery attached. Very nice and free. Books and Books and The Studio. Tennesee Williams small museum is free. The White St Pier is nice and the Navy might give you a free airshow during the visit. They train there in the winter months. Check out the AIDs memorial at the beginning.

Moondog cafe 823 Whitehead is excellent for breakfast or lunch. Great French bakery.
