Kauai in January

We plan a trip to Kauai in January.* We've never been to that island, and are attracted by its lushness, possibilities for snorkeling and hiking, etc.

From reading all the helpful guidance on this site, we are pretty sure that we want to stay on the southern end on the island to avoid extreme surf. However, we like to snorkel, swim, etc., so any recommendations are welcome re: snorkeling sites, hotels, etc. We like B & B's, but are open to decent accomodations and hotels not too far from the beaches. While we like good value, we have some financial flexibility and can afford nicer places, but luxury is not required. (Yes, we've done the Ritz, Fairmont, and that kind, but have also loved fairly spartan B & B's that are comfortable, well-located, and have good breakfasts.)

*We planned January to coincide with some busness travel later in the month in Asia. The trip HAS to be January, but this is fine coming from the upper Midwest at that time of year.

Gloria's Spouting Horn is a B and B that has a very good reputation. It is oceanfront with a small pool in the Poipu area, about a 5 to 10 minute drive to nice beaches. Kiahuna Plantation is a condo complex on a gorgeous stretch of beach in Poipu. Very nice grounds and centrally located to everything in the Poipu area.
