Kauai in 1.5 days-Itinerary okay?

We are visiting Kauai for one day during our NCL cruise so we plan on doing some snorkeling, horse back riding, Spouting Horn and if can make it to Wailua Falls or Okaka (sp?) Falls. Post-cruise we will only be able to spend a day and a half in Kauai. Our flight from Maui to Lihue arrives at 2ish and we have a one night stay reserved at the Hyatt. Our flight back to the mainland is at 11:00 pm the following day.
What can we do after we pick up the rental? I have all the restaurants done but I am wondering what we can do within that time frame.
I have noted a small itinerary. Please let me know if this is doable and if anything else you recommend we see instead. We do not want to drive to the North Shore as we are limited on time and don't want to spend alot of time in the rental.

Friday
Breakfast at Ilima Terrace in the Hyatt

Fern Grotto was panned in a recent issue of Hawaii Magazine. Why not take a helicopter tour? You'd be able to see the spectacular scenery on the north coast, together with the canyon.

I don't know if I would do lunch at Gaylords. We stopped there because we saw so many ads for the shops there and the shops in my opinion were lame. Only a few specialty shops, higher end jewelry, tropical home decorations, etc., within the building and that was it. Restaurant did look nice though. But if you wanted to have lunch and then maybe stroll the shops, it would be a short stroll.

If you're hanging out at Poipu Beach, Brennecke's is an open air restaurant right across the street from the beach. Reasonable prices.

I suggest you slightly reverse your itinerary. If you arrive at 2pm, by the time you make it through the airport, get your rental, and drive to the Hyatt it will be late afternoon. So, get settled in your room and buy tickets to Smith's Luau at Fern Grotto for the evening -- you'll get dinnner, a show, and a chance to see the grounds.

Next morning, have breakfast and go to Waimea Canyon. On the way back, stop at the other places and Spouting Horn. Then, you'll be right near Brennecke's for lunch and can spend the afternoon on the beach there. In the late afternoon/evening, you could take a carriage ride at Gaylord's -- maybe have dinner there -- but, dinner is open as to wherever you want to go. There would also be time in the late afternoon, before Gaylord's, to visit Wailua Falls -- it's only about 10 -15 minutes above Lihue and is only good for about a 5 minute stop and some photos.

I would add that when you drive to
Waimea canyon, don't stop there--continue on up to the Kalalau Valley overlook. It is a spectacular view.
