After steak, BBQ & Chinese restaurants, the food scene was pretty bleak when I moved here in the 1980s, but it has come so far. Wonderful Korean, Thai, German, Italian, Ethiopian, Indian , French, Mexican, Central American, Middle Eastern and others.
There are two recent James Beard Award winning chefs and many other nationally recognized ones.

"Yes the conservatives are in power on the Kansas side right how, but the state always bounces back from that extreme" -- not sure I would agree, the extreme right wing has been steadily gaining power since the early 90's -- sure they had a few setbacks when the State School Board went too far with its creationism agenda and Phill Kline was run out of the state, but I see no bouncing back.
