I've done that trip a few times from New York. I've also planned trips for many people and here's what I suggest if your first stop is Maui. Most first timers want to catch the sunrise at Haleakla Crater. Do it on your first morning. Since you have to get up VERY early to do this, you'll already wake up VERY early your fist day. Might as well take advantage, plus later in the week when your body clock catches up, it will be much harder to get up that early.

If you're not going to Maui first, do what everyone else says.

Going back East never seems to be a problem for us till we're home a couple of days, then the whole experience catches up with us and we hit a wall at about 2pm the 2nd or 3rd day home. Just don't plan a lot the week you return and get some rest.

My favorite trick is to not drink caffeine the day that I fly.

I'm more likely to sleep on the plane.
As soon as I get on the plane I set my watch to the "new time" and try to sleep when it is bedtime. Without the caffeine it isn't too bad to do.

Also, caffeine dehydrates you so drinking it makes it harder to stay hydrated.
