Well, that's quite the challenge!
Especially for not only peak foliage viewing but Columbus Day weekend.
Many accomodations will require 3 night minimum stays.
Your best bet is to search the web for the phone numbers of the Chambers of Commerce/Visitor's Offices of the towns in the area you wish to stay. Many maintain up to date listings of places with vacancies.
You'll not likely have much luck trying to book on the web. Those with web sites will be chock full, so you'd be wise to seek out the others...

Fall is Vermont's busiest tourist season and the most popular lodging establishements get booked months in advance.
Hope you have luck finding a place that meets your needs and have fun up here. The foliage is progressing rather nicely and should be GREAT by that time in October.

This is one of my favorites. Its in Manchester and there is so much to see and do.

The rooms are fabulous and the breakfast is the best. lots of great restaurants in the area: 2 favorites are The Inn at Toll Gate and the Black Swan.
