Hotel recommendations in NYC for a Surprise 30th birthday trip at Christmas

I'm wondering if anyone can give me any recommendation for hotels in NYC at Christmas time. I am planning a surprise 30th birthday trip (5 or 6 days) in the week before Christmas for my husband. When i first met him 8 years ago going to New York was number one on his places to visit, however due to life getting in the way we have never found time to make the trip.
We live in the UK, and this would be our first trip to New York (and the United States), as well as it being my husband's birthday during the time that we would be there. I am really looking for somewhere special. I am not really sure which area is best to stay in, particularly at this time of year, and any hotel recommendations would be much appreciated. I can spend up to about $800 a night.
