I have not stayed at both the Princeville and Hyatt, but I believe the scenery and activities to better at the Princeville Resort in northern Kauai, as it offers striking mountain and ocean views. The Hyatt is in south Kauai near the renowned Poipu beach. No matter which you choose to stay at you can drive to either area in an hour or two. Some suggest spending some time at each hotel because they are on opposite ends of Kauai.
Favorite Kauai Activities:
1. Kee Beach (North Kauai) snorkeling, on a calm day.
2. NaPali coast trail (for rugged hikers, or do helicopter or boat/snorkeling tour) entrance at Kee Beach, where the road ends, north shore.
3. Waimea canyon (closer to Hyatt)(Hawaii's Grand Canyon)

I think in the ongoing Hyatt vs. Princeville debate, the majority of people would say to stay at The Princville in the summer months and The Hyatt in the winter months due to the weather.
Personally, stayed at The Princeville this past February for my honeymoon based on recommendations from several friends and family and had a wonderful time. The hotel is really beautiful with great views of the NaPali Coast.
And my wife and I loved it so much that we would absolutely stay there again over the Hyatt no matter what time of year.
