Why is this tagged Georgia?
You will need to be more specific about what activities you like and what you can afford in USDs (not descriptions such as "mid-price) for the hotel. Exact dates might be helpful, number of people also. I would assume 1 since you use I but a lot of people say I I I when it's we we we.

If it's one week I'd just stay on Maui. If you have two weeks then you can add a second island if you want to.
I stayed in Lahaina, because I like having a town to walk around in and Lahaina's a lot of fun. We stayed at Lahaina Shores a condo hotel (but it's not a resort and doesn't have much of a beach so may or may not be anything you're interested in).
The highlights for me were Haleakala (the volcanic crater, it's amazing), the Old Lahaina Luau, walking around Lahaina (there's a self guided walking tour you can do there), a show called U'lalena at Myth & Magic Theater.
Hawaii is trickier to plan than some vacation destinations, I think, because of the different islands. If you haven't yet, do get a couple guidebooks from the library so you can read & see photos about all that is possible there.

First, you should re-tag your thread "Hawaii".
If you have 2 weeks, you should definitely go to another island. If you peruse other threads on Hawaii, you will find that there are enthusiasts for each of the 4 major islands. Although I have spent most of my visits on Maui (relatives lived there), I recommend Oahu for your second island. It really is "Hawaii Central". I've only been there once, but looking back on it, I'm so glad that I visited there, particularly since I will probably never get back to the islands.

Another activity to add for Maui is Warren & Annabelle's Magic show. It is a pile of laughs and some really great magic. Try to go when Warren is the magician.
We also enjoy snorkeling and just driving around. What can be better than getting a take-out lunch and sitting by the ocean watching people and whales?
A day trip to the upcountry is worth it. We've been up to Haleakala a few times (twice at night and once during the day). It's a toss up for the sunrise because of fog, but the daytime trip is interesting.
Just remember to have a great time and take time to relax. It's all about Maui.

It's a good hike, although the return is pretty much a slog (what goes down must come up??).
