Are you set on dining in Epcot? You might consider some other spots like Jiko at the Animal Kingdom Lodge, or the Flying Fish Cafe at the Boardwalk (easily accessible out the International Gateway entrance to Epcot).

Hate to be a contrarian but I have found the French restaurant at Epcot to be fairly mediocre. I am talking about the downstairs restaurant--haven't eaten at the one upstairs (Bistro de France?) and have heard it is much better.
I would recommend the steakhouse at Canada. Good food and very intereting selection of Canadian wines.

I thought the food at Chefs was very good the several times I have eaten there.

I realize it is all very subjective.

If you could tear yourself away from Epcot for a while the Flying Fish at the Boardwalk was wonderful the last time I ate there.

(My GOD I'm glad I don't have to cook for some of the people here!!!)

I have only eaten at the French restaurant upstairs, which is the one I was referring to as being very good.

Just to close the loop: We ended up at Morocco. I was actually in the "real" one in February, and it was nice to see how authentic a lot of the details were. The food was quite good, for Disney and the price, with some fun drinks. The service was a little slow - we had a 7:30 reservation particularly to make Illuminations, but missed it, which would be my one complaint. Otherwise, felt like it was a good choice.
