Chris, we were there in June. We went with Sunny Days, although there didn't seem to be any reason to choose one over the other.
The snorkeling was good, but not as spectacular as the Caribbean. However, there was a school of Tarpin that would swim by and take your breath away, as they averaged 4'-5' in length.
Exploring the fort after the tour gives you a good feel for isolation.
The moat has some resident upside-down jellyfish that are very pretty, and very tiny! There were also hermit crabs, geckos, tons of birds (it was nesting season.) Unlike "ramjet," we weren't bugged out!
I'm not sure what kind of "hidden" things you were hoping for, but if you pay attention while snorkeling, there are very interesting things, like tiny damselfish, spiny lobsters, foot-long sea snails, and possibly some green turtles.
Also, we did enjoy the lunch spread put out by Sunny Days, and drinks were plentiful even on the catamaran.
Enjoy!
