day trips from las vegas

Try Valley of Fire State Park, Red Canyon, Hoover Dam, Mt. Charleston, or Death Valley (a little further than the others but doable in a long day). If I had to choose one, it would be Valley of Fire.

From the information you give it sounds like Valley of Fire might be what you are looking for. It's an easy drive (55 miles north-east of Las Vegas I think).
There are lots of opportunities for short hikes there and the landscapes are pretty interesting. I went in December and in the park the temperatures must have been around the high 80s.
If you have enough time I think you can do a loop and come back to Las Vegas via Hoover dam and Lake Mead if you are interested in seeing those.
An alternative closer to Las Vegas is Red Rock Canyon but I haven't been there so can't really compare this to the Valley of Fire.

We went to Valley of Fire and thought it was awesome! Be sure to bring water with you -- once you get into the park, you can't even BUY water. Stop at a convenience store on your way out of Vegas.
