It would be possible, but hurried. Why not spend the day in Denver--Art museum, botanic gardens, butterfly pavilion in Westminster. Rockies game?

Oh, you could go to Morrison and see the little dinosaur museum there. Red Rocks theater and dinner at The Fort.

Boulder is an easy drive and there's plenty to do there (loved the Celestial Seasonings Tea tour). In Denver, we really liked the Molly Brown house and also the Hammond Candy factory...

I would go to Boulder and eat at Chautauqua, or Red Rocks/Morrison and eat at The Fort. Lots of nice places to walk and hike in those areas.

Another suggestion--drive to Evergreen stopping at Red Rocks on the way there and eat at Willow Creek restaurant, overlooking Evergreen Lake.
