It is truly an individual thing. I've never experienced altitude sickness myself.
DD's wedding was in Winter Park. Guests flew to Denver and drove immediately to Winter Park elevation.
Out of 130 guests, only one fell ill. She was in her mid-60s, and had to leave the venue to return to Denver on the second day.
I don't know if she was drinking extra water or not, but don't think she had a large amount of alcohol on the first night.
You just never know.
