one more try....two... eight ounce packages ff cream cheese....sorry.

WHITE CHOCOLATE RASPBERRY CHEESECAKE

Two 8 oz pks softened cream cheese
1/2 cup sugar
1/2 tsp vanilla
2 eggs
3 squares white baking chocolate, melted (Nestles works best)
3 TBSP raspberry preserves, melted
1 ready to use chocoate crumb crust

mix cream cheese, sugar, vanilla and eggs with mixer until well blended.
stir in melted white chocolate.
pour into chocolate crust. microwave preserves long enough to make them liquid, pour thru strainer to remove seeds and skins. dot strained preserves on top of cheesecake and swirl with knife. bake at 350 degrees about 45 min to one hour until center is almost set. cool, then refridgerate 3 hours or over night (overnight is best).

To you Carnegie Deli boosters: Better than the Stage? I've had corned beef at Carnegie but never cheesecake.

I haven't been to the Stage, so I can't compare. Guess I'll have to go there next time and find out, but if it's better than Carnegie's I'll be (pleasantly) shocked (not to mention at least 5 lbs. heavier--so glad we don't have real cheesecake here in Seattle!)

And these recipes--WOW--I'm impressed, but how do you people have time to bake and travel!

KeyGal. The Aramingo Diner? Are you from Philly? Country Club Diner on Street Road in Bensalem has got wonderful cheesecake too. Of course there is the Mayfair Diner too. I also have to say that the Frugal Gourmet has a wonderful recipe in one of his books that we make all the time. Everything, but the crust is made in a blender. So easy and presents beautifully. Yummy.

Years ago we used to order a New York Texas Cheesecake from the "Needless Markup" (Neiman Marcus, that is) catalog. It was the most delicious creamy light cheesecake EVER!

Was aaaat the sushi bar and they waitress was offering tastes of their new dessert....fried cheesecake...thought of this thread...it was a slice of cheesecake dipped in tempura batter and fried, not bad if you don't mind warm cheesecake. I prefer mine chilly. If anyone tries the receipes give some feed back.
