Charlotte?
OK, my family and I have to spend a week in Charlotte around the 4th of July. We're looking for a few things...
1) A 'kick-back' style of informal resort (no antebellum southern finery) to stay in rather than the basic chain suite
2) interesting things to do on our off days (we're there for a purpose that will consume about half of our time).
3) interesting, family-style, non-chain restaurants
4) a good NC BBQ
5) any other useful info.

Mama Ricotta's on Kings Drive
The Penquin on Central
Showmar's--lots of locations, cheap, Greek style
Thai Taste on East Blvd.
Charley's at Cotswold Shoping Center
Wan Fu or Baoding--GOOD Chinese
Mama Fu's across from Park Rd. Shopping Center--a noodle house
Spoon's BBQ on South Blvd.
Saigon Palace for Vietnamese--South Blvd.
Food court at SouthPark
Three Pesos Mexican on Woodlawn Road near I77
Garibaldi's on South Blvd.--good authentic Mexican also
Krispy Kreme doughnuts--in Myers Park (always "hot now" it seems) or its main location off Woodlawn at I77
Firehouse Subs--South Blvd at Woodlawn--THE very best subs you will ever eat
A really fun place to eat lunch is the United House of Prayer for All People--near the stadium downtown. It has a cafeteria in the basement where lots of downtown office workers eat--TRUE southern cooking like you can't find a lot.

If you will be in town on Friday and/or Saturday before the 4th the monthly antique show is at Metrolina Fair Grounds, just north of Charlotte.
There is a great fireworks show downtown on the 4th. A concert at Memorial Stadium and then the fireworks. There will probably be others around too--perhaps even at Ballantyne.
Carowinds is an amusement park just south of town on the SC border.
There is a huge outlet just north of Charlotte--Concord Mills at Concord.
There are NASCAR race shops north of town also that offer tours I think.
There is a very nice suite hotel at SouthPark mall.
Discovery Place downtown is an outstanding science museum. Right across the street from it is the Mint Museum of Craft+Design--also outstanding. And finally around the corner is the Museum of the New South.
Just north of town is Latta Place, a restored 17th century plantation house (think primitive back country here) and nearby is the Raptor Center. This is also near the Metrolina antique show.
Spoon's BBQ would be the NC BBQ place of choice.

We expect hot and humid (aargh - we're in Los Angeles which can be hot, but never humid, in the summer).
We were hoping for a country-type (e.g., cabin on lake or in woods) type of experience as we're in a pretty cityfried (sic) area in LA...
As for food, local flavor would be great... you know, places that the Cracker Barrel are trying to remind folks of...
