Best way to spend the last few hours in Kauai

What is the best way to spend the last few hours in Kauai (or any Hawaiian island, for that matter)? We need to check out of our condo at 10:00 in Poipu and our flight is at 3:00. Any suggestions? I even considered paying for another night just so we wouldn't have to rush out but that's a pricy option. Any ideas?

We went to a couple of water falls and shops.

If your flight is at 3 p.m. and I'm assuming you are returning a rental car, you should be at the airport no later than 1 p.m. There are several checkpoints before reaching the gate.
Given that fact, I would find a place to have either a late breakfast or early lunch and then proceed to the airport. Gaylord's or Duke's come to mind and they both are relatively close to the airport.

We had same issue, Suite Paradise couldn't give us a late checkout so we went for breakfast at Joe's on The Green then up to Kilauea Lighthouse for the birds and views, then to airport with stops on the way, Kealia beach etc.

Our last day we set out from Princeville, headed to the lighthouse, ate a nice brunch, then stopped at several small shops making our way down to the airport.
