In the Northern Adirondacks, it's late September to first week in October. Southern Adirondacks and around the Capital Region, early to mid-Oct. In the Catskills, color can last 'til the end of October. Keep your eye on the weather reports and the foliage charts on the state's Website, though. It's been another really dry year up here (Albany) and the lack of rain will impact the color change.
