Easiest, IMO is a taxi. It will run you around 40-50.
Another easy, but less expensive option is the Olympia Trails bus. It picks up across the street from Grand Central on Park ave b/t 41 and 42. Don't know the cost, but significantly cheaper than a taxi. It stops on the west side first, so plan ahead.

From Grand Central take the subway S shuttle to Times Square. Change to the 1, 2 or 3 train south to Penn Station (1 stop). Exit the subway and take New Jersey Transit to Newark Train Station. Take Air Train to/around the airport.
Be aware that you will have to deal with several sets of stairs, and depending on time of day the subway will be packed solid.

From GCT, the Olympia bus is virtually door-to-door and costs about the same as taking subway to NJ transit train to AirTrain.
