Peppermill, Victorian at the Barbary Coast and Coffee Shop inside the Tropicana.

A little pricier than Denny's however.

Grand Luxe Cafe at the Venetian, hands down! Excellent food, good service. Never had a bad meal there for breakfast or dinner.

Peppermill is a gas--they just don't make them like that anymore (food's good too). Also, try Angie's for incredible home-made pastries, breads and sausages (they make them in-house). Angie is a guy and he also makes the best Eggs Benedict in the world. They do a huge take-out business on their hollandaise alone!

Grand Luxe Cafe isn't really a coffee shop (which usually means relatively inexpensive casual restaurant).
GLC is the Cheesecake Factory in different clothing. Same owners, similar food, not inexpensive.

We kind of like the small overpriced cafe in the Bellagio. They make very nice pastries and lattes and such. Although I don't have breakfast there, there is usually a line all day, we like to have a late afternoon espresso and gear up for the evening.
