I haven't been to Samplings, but I have been to their affiliated restaurant in Breckenridge, The Cellar. The concept for both places is tapas-style food, though we went there for dinner. None of the people in our group wanted to share, so we had more of a traditional, albeit 3-course, dinner (in the tapas tradition, the serving sizes are a bit smaller than usual in the U.S.). I thought the food was quite good, and somewhat creative (I had the duck, and unlike most preparations, the accompaniments with it were on the savoury, instead of sweet side; refreshing). One thing I did notice was that, at The Cellar, many of the items were salads, which I think would be difficult to share tapa-style. I would have like more variety. Frisco is not particularly known for its high-end, fine cuisine, so you've probably chosen one of the few that would even be somewhat in that category.
I'm not familiar with restaurants at Copper, but in Frisco there's a Fiesta Jalisco. The food is quite authentic, decent-sized portions (as in, not too much food), and not totally smothered in cheese. The service is fast. The down-side is that the place is so authentic that sometimes it's difficult to communicate.
The only other place I'm familiar with in Frisco is the Butterhorn Bakery. Great baked goods and breakfasts.
